Vegan Pressed Cuban Sandwich

The savory, perfectly seasoned seitan brings a robust texture to this plant-based cuban, harmonizing effortlessly with tangy pickles, mustard, and dairy-free cheese. Encased in a crusty Cuban bread, each bite delivers a satisfying blend of flavors, creating a vegan twist on a classic favorite that's sure to leave you craving more.

SERVING: 2 large sandwiches

PREP/COOK TIME: 30 mins

ALLERGENS: Soy & Wheat

INGREDIENTS: 

  • 1 Package BE Hive Deli Slices

  • 1 T cumin 

  • 1 T soy sauce

  • 1 T Brown sugar

  • 1 T Olive Oil

  • 3 slices of vegan provolone or swiss

  • 4 T Spicy brown mustard, divided

  • ½ c Dill pickle chips, divided

  • 4 T Vegan mayo, divided

  • 2 sub rolls or cuban bread rolls 

  • 2 T neutral oil to cook

INSTRUCTIONS:

Gather all of your ingredients

In a small bowl, add your BE Hive vegan Deli Slices and separate the slices a little with a fork. Add the cumin, soy sauce, brown sugar and olive oil to the bowl and mix into the deli slices. Once thoroughly mixed, set to the side to continue to marinate.

Heat a cast iron skillet to medium heat with 1 T of neutral oil. 

While that is heating, cut your sub rolls open. On one side, spread mustard. On the other, spread your vegan mayo. Evenly place half of your marinated seitan on each of the sub roll bottoms. 

Next cut your cheese slices diagonally into triangles. You should have 6 triangles of cheese. Add three to each sandwich. Top with your pickles and close the sandwich, pressing down slightly to squish the sandwich. 

Place your sandwiches in your cast iron. If you can only fit one at a time that’s okay, just do these steps and repeat! Take another pan or a plate that fits on top of the sandwiches and press heavily down onto the sandwiches, pressing it like a panini press. If you have some heavy cans around, weigh down the pan to add pressure and let cook for 2 mins. Release the weight from the sandwiches and flip, once again pressing them and weighing the sandwiches down for another 2-3 mins until golden brown and warm. 

Cut diagonally and serve!
